When Nicky Gibbs returned to South Africa she held the position of executive chef of The Melrose Arch Hotel, the Soulsa restaurant in Melville and the Sandton Towers Intercontinental. She now wows diners at The Westcliff Hotel with her “now & conscious cuisine”.
Always aware of seasonal and fresh produce in compiling her menu’s, Nicky Gibbs buys specialised products from both new and established suppliers. She insists on free-range meat and chicken and often buys products from boutique farmers such as home-made salami and bread.
When she shops for herself, she frequents the Atholl Oaklands Fruit & Vegetable Shop, the Braeside Butchery and La Mariana Seafood in Edenvale.
