Having owned Chefettes for 20 years, I have seen dramatic changes in the food industry in South Africa. Twenty years ago we could not get Thai fish sauce or cellophane noodles or even herbs such as coriander! Now of course, we have caught up with the rest of the world and South Africa is renowned for its food and produce worldwide.

Over the years the trend has moved towards healthy & light meals, particularly with our corporate clients. Gone are the days of 5 hour long boardroom lunches with loads of cream, butter & alcohol!

We love to shop at the Bryanston Organic Natural Food Market – the quality & range of products available have been consistent for years. The Bluebird Whole Food Market and The Northcliff Natural Organic Market are also food shopping destinations.

At the moment we like to include aged prime rib or rib eye of beef, organic dark chocolate, micro herbs and duck on our menus. Clients love scallops, semi-fredo’s and puree of cauliflower or parsnip. Fresh and seasonal produce, as well as a good presentation, are the key ingredients to any dish.

Our ingredients are sourced from a number of suppliers. The best fresh produce comes from Turn ‘n Slice and the best meat from the Braeside Butchery or the Broederstroom Butchery. We also use a lot of wild mushrooms supplied by Agri-Nouvelle. Fresh farm butter, gorgonzola, marscapone cheese and cream are supplied by Cremalat.

Our Head Chef Robert trained at the Olive Chef School in Bloemfontein which has a superb reputation to train chefs for both the restaurant and catering industries. Capsicum based in Johannesburg also has a very good reputation. We are exploring the possibility of setting up an evening cookery school at Chefettes to launch early 2011.

From our humble beginnings in my parent’s kitchen, Chefettes has gone from strength to strength. I put this down to consistency, keeping up with the trends, our wonderful staff & of course, exceptional food, service and reliability.
