Citrus Roast Chicken with Grilled Mushrooms and Spekko Long Grain Parboiled Rice

I love the classic roast duck in orange sauce. I would eat it once a week if I could, however I do try to be sensible about my eating habits. My addiction to the classic roast duck encouraged me to find a meat that is far less fatty. I then developed this recipe that uses chicken instead of duck. It is also a quick and easy recipe that takes minutes to prepare.


4 chicken quarters, thighs and drumsticks
30ml olive oil
200ml fresh orange juice
62,5ml lemon juice
50ml honey
1 tbsp fresh crushed ginger
Salt to season
2 oranges, cut into 4 wedges or orange slices
Icing sugar to dust oranges

For the grilled mushrooms

8 medium brown mushrooms
Salt to season
Sunflower oil to grill
40ml harissa paste

Here’s How

Preheat the oven to 180 degrees Celsius. Season the chicken quarters with salt. Rub fresh ginger over the chicken pieces. Drizzle with olive oil. Combine lemon juice, orange juice and honey. Place the chicken pieces in a oven proof baking dish. Baste the chicken pieces with the citrus marinade every ten minutes. Allow the chicken to roast for 40 minutes. The citrus marinade should coat the chicken and the honey will caramelize the chicken skin. Heat the skillet and drizzle with sunflower oil. Grill the mushrooms for a minute or two. Place on a baking tray and bake for 7 minutes. Serve the mushrooms with a dollop of harissa paste. Heat a non-stick frying pan and sprinkle the orange wedges with icing sugar. Place the wedges on the frying pan and caramelize the sugar. Garnish the chicken with the caramelized wedges. Serve with Spekko Long Grain Parboiled Rice.

Yudhika’s Tips:

– When preparing the mushrooms take care when adding the salt. The harissa paste can be quite salty so please check the seasonings before adding more.
– Use a whole chicken instead of quarters if you prefer.
– The citrus marinade can be used to marinate chicken wings. They make a wonderful snack and are easy to prepare.
