4 ostrich steaks
A pinch of dried thyme
Salt and black pepper
¼ cup cottage cheese
4 large wraps
100g fresh rocket
200g cherry tomatoes, halved
1 small red onion, thinly sliced
½ cup Parmesan shavings
1. Heat a griddle pan until smoking hot. Rub the steaks with the olive oil, thyme and seasoning.
2. Depending on their thickness, grill each steak for about 4 minutes on each side for medium-rare.
3. Remove from the pan and set aside to rest for 5 minutes before slicing thinly.
4. Spread a tablespoon of the cottage cheese onto each wrap and layer with the steak, rocket, tomatoes, onion and Parmesan.
5. Wrap up and enjoy.
