This is a weight watchers dream. Grilled fish and brown rice pulao is particularly low in fat. The simplicity in preparation is another reason that you should try this recipe. I prefer using a firm fish like Englishman for this dish. I make a simple grilled fish at least once a week. I am often surprised that children often do not eat fish. Many restaurants serve deep fried fish with French which defeats the purpose of eating fish in the first place. Here is my quick fish meal in minutes that does not require any deep frying. 4 firm fish fillets, Red Snapper or Englishman
Maldon Salt to season
Lemon wedges to serve
Sunflower oil to grill fish
Preheat oven to 180 degrees. Lightly spray a frying pan with Spray and Cook. Heat pan and add a splash of oil. Season fish fillets with maldon salt. Grill the fish until golden brown. Place on a baking tray and bake for a further 5 -10 minutes depending on the thickness of the fish fillets.
Spekko Brown Rice Pulao Ingredients
350g Spekko Brown Rice
40ml sunflower oil
10ml mustard seeds
1 medium onion, finely chopped
Juice of one lemon
Salt to season
Boil brown rice in salted water until tender. Strain and allow excess water to drain off. In a pot, heat oil and add mustard seeds. When mustard seeds begin to sizzle, add onion and sauté until lightly browned. Add brown rice to the onion and steam gently for a few minutes on a low heat. Squeeze lemon juice over the rice and serve.
