Lamb Kebabs with Spekko Long Grain Saffron Rice

These lamb kebabs will melt in your mouth. The secret to making good kebabs is to always leave the fat on. The fat will melt away when the kebabs are cooked. Indians serve kebabs with a coriander and mint sauce or yoghurt sauce. Kebabs are a perfect meal or snack. They are also very simple to prepare. A few basic kebabs can be served with a variety of dips.

750g lamb mince
2 onions, grated
8 cloves garlic, crushed
10ml cumin seeds
2 tsps garam masala
2 potatoes, boiled
Salt and pepper to season
30g flat leaf parsley, chopped
2 green chillies chopped

Here’s how:
Preheat oven to 180 degrees. Squeeze out excess moisture from the grated onion. Discard the onion juice. Place lamb mince in a mixing bowl. Mash the boiled potato. Add garam masala, grated onion pulp, garlic, mashed potato, cumin seeds, chopped parsley and green chilli to the lamb mince. Season with salt and black pepper. ‘Knead’ this mixture until the ingredients are combined. Leave mince in the refrigerator for an hour. Mould into patties and grill in a lightly oiled frying pan. Seal the patties in a hot pan. Place the patties on a wire rack with a roasting pan underneath. The roasting pan will collect the excess oil and any juices. Bake for 5 – 7 minutes. Serve with Spekko Long Grain Saffron Rice.

Spekko Long Grain Saffron Rice Ingredients
350g Spekko Long Grain Rice
A few saffron strands
3 cinnamon sticks
2 bay leaves
25ml butter

Here’s how:
Boil Spekko Long Grain Rice in salted water with cinnamon sticks and bay leaves. Heat saffron strands in a dry frying pan. Allow saffron to cool. Using your fingertips, crush the strands into a powder. Pour over 100ml boiling water. Leave aside for 10 minutes. Strain rice and allow excess moisture to drain. Place rice back in a pot and stir in butter. Pour saffron infusion over the rice cover with a tight fitting lid. Allow rice to steam for 5 minutes on a very low heat.
