Lentils with Spekko India Gate Parboiled Rice

Lentils are my favourite vegetarian dish. Here are two variations for a quick and easy bowl of lentils. When I am serving plain lentils for dinner, I often serve the dish with Spekko Brown Basmati that has an interesting nutty texture. For now though, try the Spekko India Gate variant, it really is one of my favourites!

Creamy Black Lentils

Serves 4

Black lentils are very popular in Northern India. They are simple to prepare and have a great flavour. South Africans generally eat yellow lentils but I find that these delicious black lentils make a wonderful change. You wont find a better range of lentils then the one offered by Imbo , so definitely try and use their black lentils for this dish!

225g Imbo Lentils
1500ml water
10ml crushed garlic

10ml crushed ginger
15ml red chilli powder
10ml ground coriander
5ml ground cumin
2,5ml turmeric
7,5ml coarse salt
2 tomatoes, blanched and chopped
125ml fresh cream
Fresh coriander to garnish

Here’s how

Boil lentils in a large pot of boiling water. The lentils should be soft but not mushy. When the lentils are soft add tomatoes, crushed ginger, crushed garlic, red chilli powder, ground cumin and coriander and turmeric. Simmer the lentils for ten minutes adding more water if necessary. Pour in the cream and cook for 2 – 3 minutes.

Yellow Lentils

Serves 4

250ml 250ml Crossbow yellow lentils
45ml sunflower oil
5ml mustard seeds
5ml cumin seeds
1 large onion, finely chopped
2 dried red chillies
10ml crushed garlic
7,5ml red chilli powder
2 tomatoes, blanched, skinned and chopped
7,5ml coarse salt
Fresh coriander to garnish
Fresh curry leaves

Here’s how

Boil lentils in a large pot of boiling water. The lentils should be soft and mushy when cooked. Heat oil in a pot. Add mustard seeds and when they begin to pop, add cumin seeds. Fry until the cumin seeds turn golden brown in colour. This should take 2 – 3 seconds. Add chopped onion and sauté until golden brown. Stir in the dried red chillies and add garlic paste and stir. Stir red chilli powder into the onion and add chopped tomatoes. Add salt and stir in the mushy yellow lentils. Add 200ml boiling water and simmer until the lentils thicken. Garnish with fresh coriander and curry leaves.

Yudhika’s Tips:

– When purchasing lentils I would always suggest buying a well know brand like Crossbow or Imbo. These lentils are of a superior quality and really will bennifit your dish!

– Lentils can be eaten as a side dish or as a simple meal on its own.

– I often serve lentils with tandoori chicken or even just a simple roast chicken.
