Mediterranean Tomato and Egg Wrap

Beat breakfast by spicing things up. This Mediterranean tomato and egg wrap will kick start any day.



6 cherry tomatoes
1 tbsp olive oil
1 pinch chilli flakes
Salt and pepper to taste
3 whole eggs
1 wrap


  1. Place the cherry tomatoes in a blender and pulse until smooth.
  2. Add the tomato purée to a nonstick skillet, on medium heat, with the olive oil.
  3. Add the chilli and seasonings and cook until all the water has evaporated (around 8 minutes).
  4. In a bowl, beat the eggs.
  5. Add the eggs to the tomato mixture.
  6. Cook for 6-8 minutes, or until eggs have separated from the side of the pan.
  7. Place the egg mixture into wraps. Fold and enjoy.
