This is a mess that I have no problem cleaning up. It takes a while for me to regain my dignity after a crab dinner. Eating crab is a delight. Please eat this with people that you are comfortable with. It is the messiest meal but certainly one of the most enjoyable experiences. There are many ways in which you can prepare crab. It is can be done with coconut milk, marinated and cooked over a charcoal fire or the way the Chinese do it…Stir fried with soy sauce, garlic, chilli, onion and fresh herbs. Which ever way you choose to prepare the crab, make sure that you have wet wipes, finger bowls and preferably an old table cloth.
8 – 10 Deep Sea Crabs, cleaned
125ml sunflower oil
8 cloves garlic, crushed
2 medium onions, thickly sliced
4 green chillies, finely chopped
100ml dark soy sauce
Salt and black pepper to season
6 spring onions
30g fresh coriander, chopped
Break off crab claws and legs. Break the body into halves. Heat wok on a high heat. When the wok is smoking, add oil. Fry garlic until golden brown. Add crab sections and sauté until the shell changes colour. Add onions and chilli. Sauté until the onion softens slightly. Pour soy sauce over the crab. Sprinkle the sugar over and stir fry until the excess moisture evaporates. Garnish with fresh coriander and spring onions. Adjust the seasoning. Grind black pepper over the crab before serving.
