Mini Spinach Frittatas

This must be one of the easiest meals to make, and nothing beats a good spinach frittata. Go on, get cooking!

Makes: 2 dozen

1 cup full cream ricotta cheese
3/4 cup grated Parmesan cheese
2/3 cup chopped fresh mushrooms
100g spinach
1 large egg
½ tsp dried origanum
¼ tsp salt
¼ tsp pepper
24 slices pepperoni

1. Preheat oven to 200°C.
2. In a small bowl, combine the ricotta, Parmesan, mushrooms, spinach, egg, origanum, salt and pepper. 3. Place a pepperoni slice in each of 24 greased mini-muffin cups; then fill three-fourths full with the cheese mixture.
4. Bake 20-25 minutes or until completely set.
5. Carefully run a knife around sides of muffin cups to loosen the frittatas. Serve warm.
