8-10 mint leaves
30ml simple syrup (equal parts hot water and sugar, stir it up and dissolve it)
20ml fresh lime juice
1 shot of white rum
Extra mint leaves
Chunks of lime
2 shot of soda water
- Add the simple syrup and mint leaves to a cocktail shaker.
- Shake lightly to extract the aromatic oils from the leaves. Add fresh lime juice and white rum to the shaker and shake.
- Strain into a high-ball glass that has ice, mint and lime chunks in it.
- Top up with soda water and serve.
