750g Smoked Snoek
250 ml Sunflower Oil
4 Onions, sliced
25 ml Fresh Ginger, chopped
2 Red Chillies, pitted and finely chopped
5 Medium Potatoes
How to make it
Remove skin, debone and flake the Snoek.
Boil the potatoes until they are cooked but not soft (about 20 minutes).
Allow potatoes to cool and cut into cubes.
Fry potato cubes in oil until golden brown. Set aside.
Fry the onions, chillies and ginger in the oil until the onions are transparent.
Reduce heat and place the flaked Snoek on top of the onions.
Place the fried potatoes on top of the flaked Snoek.
Cover and keep warm for another 15 minutes.
Just before serving, sprinkle with freshly ground black pepper and parsley.
Serve with fresh brown, whole-wheat or seed bread. To make it extra yummy, serve with drizzles and dollops Moskonfyt or Grape Jam!
