South Indian Lamb Curry with Spekko Basmati Rice

Lamb is a wonderful, tender meat. This is a wonderful alternative to the usual lamb and potato dish that is made in our home. If you are nervous about having dinner guests, this is the dish for you! The lamb knuckles can be par cooked to save you time. The pre-prepared meat should be cooled and can be stored in the refrigerator for up to two days.

Curry leaves, cumin and mustard seeds make this a memorable dish. The mustard seeds add a sweet, nutty flavour to this dish. The lamb can be par cooked in advance to reduce cooking time.

Ingredients

1.2kg leg of lamb or lamb knuckles
5 green cardamom pods
5 cloves
2 cinnamon sticks
2 bay leaves
2 litres water
Salt to taste
62.5ml oil
1 tsp mustard seeds
1 tsp cumin seeds
1 onion, finely chopped
2 sprigs of curry leaves
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp red chilli powder
1 tsp ground cumin
2 tsp ground coriander
2.5ml tumeric powder
4 tomatoes
Salt to taste
1 tsp garam masala
50ml fresh coriander, chopped

Here’s how I do it:

To par cook the lamb: Place lamb pieces, salt, cardamom pods, cloves, bay leaves and cinnamon sticks in a large pot with the water. Bring to boil and simmer until the lamb is tender.

Blanch tomatoes in boiling water. Plunge into iced water and remove skins. Liquidize until smooth. Heat oil, add mustard seeds. When they start to splutter and cough add cumin seeds and then onions. Sauté until golden brown. Add curry leaves, red chilli, ground cumin, coriander, followed by ginger and garlic paste. Do not allow the ground spices to burn. Add the lamb pieces and stir to coat with the spicy paste. Pour in the fresh tomato puree. Simmer until the tomato is cooked and the sauce has thickened. Adjust the seasoning. Sprinkle garam masala over and garnish with fresh coriander.
