Soy Coriander Beef Fillet with Spekko Pure White Rice

Serves 4

Beef fillet tastes wonderful with soy sauce and chilli. The fillet can be seared and topped with stir fried bok choy, onions and green peppers.


1kg beef fillet, sliced into 4 portions
Maldon salt to season

To stir fry

50ml sunflower oil
2 onion, thickly sliced
4 green chillies, deseeded and chopped
4 garlic cloves, crushed
1 green pepper, cut into strips
4 heads of bok choy, outer leaves removed
25ml dark soy sauce
25ml light soy sauce
100ml fresh coriander to garnish

Here’s how:

Heat a cast iron pan. Season the fillet and sear on a high heat. Remove from heat and allow to rest for a few minutes. Heat oil in a wok. Add onion slices and stir fry until it softens slightly. Add green pepper, garlic, chilli and seasoning sauces. Lastly add the bok choy and toss taking care not to over cook it. Top seared fillet with stir fry and garnish with coriander. Serve with Spekko White Rice.
