Spicy chicken Spekko Brown Basmati Rice Salad

Thai salads are an excellent choice for a light meal! The Spekko Brown basmati is Low GI and is the perfect choice for a rice salad. Although salads are light, the addition of a low GI starch like the Spekko Brown Basmati will keep you fuller for longer and prevent you from getting the munchies!!!

Serves 4


Ingredients
600ml Spekko Brown Basmati Aromatic Indian Rice
3 tbsp sunflower oil

400g chicken fillets, thinly sliced into little pieces

4 cloves garlic, crushed

2 chillies, deseeded and finely chopped

15ml fish sauce

30ml lemon juice

10ml brown sugar

1 small cucumber, deseeded and thinly sliced

62,5ml mint leaves

62,5ml coriander leaves

Salt to season

Here’s how
Heat oil in an electric wok. Add chopped chicken fillet and stir fry until the chicken has browned. Add garlic and stir fry for a few seconds. Remove from the wok when chicken has cooked through. Place the rice in a mixing bowl, add chicken and the remaining ingredients except the fresh herbs. Stir to thoroughly combine. Garnish with mint and coriander and adjust the seasoning. Add salt only if necessary.

Yudhika’s Tips

  • Spekko Long Grain Parboiled Rice, White Basmati or Brown Rice are all low GI and are endorsed by the Heart Foundation. Any of these variants would work well in this recipe.
  • Prawn, fish or beef fillet may be used in this recipe.
  • This recipe is ideal for using up leftover rice.


Brown Basmati and Feta Fritters

Fritters make for an excellent snack! Nicky Gibbs, executive chef at the Westcliff Hotel has a fantastic recipe that takes only 30 minutes to prepare.

Ingredients

500g cooked Spekko Brown Basmati Aromatic Indian Rice

150g chopped red onions

50g chopped garlic

3juiced lemons

a pinch of nutmeg

350g feta cheese

50g chopped mint

300g flour

6 large eggs

200g bread crumbs

100g crushed pistachios

Olive oil for frying

Here’s How
Cook the brown basmati and leave to cool
Fry off the onion, garlic. Let them cool and add the lemon juice and feta and cream together.
Add to the rice and cream together then add the mint and season to taste with salt and pepper.
Form into little patties. Mix the bread crumbs and the pistachio nuts together

Flour, egg and then bread crumb the patties.
Shallow fry in a hot pan till golden brown.

This is a great base for all kinds of snacks, so have some fun.
