This is a very popular Thai restaurant dish. It is also one of the most popular stir fry dishes around South East Asia. If you are short of time, this dish is for you. 5 minutes to prepare and 15 minutes to cook. Give it a bash… you wont be disappointed.
850g chicken thigh or breast fillets, sliced
Cornflour to dust
75ml sunflower oil
2 onions, thickly sliced
4 garlic cloves, crushed
25ml Golden Mountain Seasoning Sauce
25ml light soy sauce
25ml dark soy sauce
Salt to taste
100g roasted cashew nuts
6 spring onions, thinly sliced
Fresh basil or coriander
Heat oil in a wok. Lightly dust the chicken in cornflour. Shake off the excess flour. Brown chicken in batches taking care not to overcook them. Remove from the oil and drain on paper towel. Reheat the remaining oil and stir fry onion until it softens slightly. Add garlic, browned chicken, light soy, dark soy and golden mountain seasoning sauce. Add cashew nuts, sugar and salt and stir fry until the sauce bubbles.
Serve with steamed Spekko Jasmine Rice.
