Egg Fried Rice with Spekko Pure White Rice

I have always enjoyed eating rice for breakfast. I particularly enjoy an Asian breakfast as rice is always served in some form. Just thinking about the Asian breakfast buffet is enough to get me out of bed. Here is a simple recipe for fried rice and some tips on how to dress it up and turn it into a feast!

4 cups cooked Spekko White Rice
62,5ml sunflower oil
6 eggs, beaten
4 garlic cloves, crushed
1 onions, sliced
2 green chillies, finely chopped
30ml light soy sauce
25ml dark soy sauce
1 red pepper, thinly sliced
10ml sugar
6 spring onions, finely chopped
Salt to taste
125ml fresh basil

Here’s how:
Heat 12.5ml oil in a wok and pour in beaten egg. Cook until the eggs are lightly scrambled. Remove from wok. Heat remaining oil in a wok and sauté onions until they soften slightly. Add garlic, green chilli and red pepper. Add dark and light soy sauce and the cooked white rice. Stir the rice and add the cooked egg. Sprinkle the sugar over the rice and add more salt only if this is necessary. Remove from heat and add chopped spring onion and the basil leaves.

If you want to experiment with this dish, try adding a little crushed ginger while you sauté the onions to really bring out the oriental flavours!

To make this dish even healthier try using Spekko’s Brown Rice variant instead of the Pure White option…both are equally delicious!
