Indian Rice Pudding with Spekko Pure White Rice

I have tasted Italian, Spanish, English, Thai and Turkish rice puddings. They are all perfect and to choose my favourite would be a difficult task. Rice pudding is sublime… it has all the things I love the most about pudding… comforting, creamy and familiar. Remember to exercise patience when making this dessert. It is certainly worth the effort.


250ml Spekko White Rice
375ml water
Pinch of salt
3 medium cinnamon sticks
6 green cardamom pods
1500ml full cream milk
100g butter
100ml fresh cream
200ml sugar


In a large pot, combine rice and water. Allow to simmer for ten minutes on a very low heat. Add salt and full cream milk. Simmer for a further 35 – 40 minutes stirring frequently to prevent scorching. Stir in butter, sugar and fresh cream. Simmer for a further 5 minutes. Add more sugar if you prefer. Remove the cardamom pods and cinnamon sticks before serving. This can be served hot or cold.
