What is a thali?

The thali is an Indian meal with contents varying from one regional cuisine to another. A thali is a selection of different dishes, served in a stainless steel platter with little bowls (“katoris”). The katoris consisting of a wide variety of different dishes providing nutrition, texture, flavours and colours. It is the way Indians have traditionally eaten at home for centuries. The thali in different regions of India consists of cuisine native to that region. The gujarati thali for example will have farsans (gujarati vegetarian canapes), vegetables, dals, chapatis (rotis), rice, salads and pickles. in the south the emphasis shifts to rice delicacies as well as vegetables.

The etiquette of eating the thali

The thali is best eaten by spooning a small portion of food from an individual dish into the area next to the rice, and then combining it with the rice, and then repeating this process in sequence. This enables the flavour of each dish to be appreciated individually. Do not either mix more than one dish simultaneously with the rice, or mixing the rice in the individual bowls. Rotis or Naan breads are eaten with the food by using a piece of it to scoop the food from one of the dishes.

Karma’s Thali

Centuries ago in the Sharjahan time, all the Moghuls would meet socially to discuss and appreciate various passions in life. These included the love for arts, music, poetry and dance. Central to these gatherings was the lavish foods which were prepared by the Bawarchi (chefs) in the land. As these events were long and elaborate, the Moghuls enjoyed a variety of dishes throughout the evening which comprised of up to at least 100 dishes. In this way, they were able to eat all the beautiful food that the Mughlai cuisine had to offer and at the same time, enjoy the pleasures of life…
