If you fancy a hint of sweet, savoury and smoky flavours on one plate, then whip up this Parma Ham, Grilled Nectarine, Walnut & Rocket salad – it is guaranteed to hit all the right spots!


Serves 2 as a light meal


2 ripe nectarines, sliced into 1/8ths
6 – 8 slices Parma ham, speck or smoked beef
2 handfuls wild rocket
½ cup walnuts, halved or quartered
Citrus dressing

How to make it

Heat a griddle pan to very hot.
Grill the nectarine slices on both sides until dark grill marks appear.
Remove from the grill and chill.
To compile the salad, place a layer of wild rocket on a serving platter or individual plates. Top with nectarine slices and Parma ham and scatter over the walnuts.

Serve with a citrus dressing like lime and coriander.
