Light & Fresh Mixed Bean Salad

4 as a side, 2 as a main


You will need

2 x 410g cans mixed beans
1 packet (25g) flat leaf parsley
1 large lemon, juice and rind
1 red onion, finely sliced and blanched for 2 minutes
1 small chilli
5 Tbls Olive Oil
½ Tbls garlic, chopped
1 Tbls white wine vinegar

How to make it

Drain and rinse the beans, set aside.
Combine the parsley, lemon juice, lemon rind, chilli, olive oil, garlic and white wine vinegar. Chop it finely in a food processor.
Season well with salt.
Pour the mixture over the onions and allow to marinade for at least 20 minutes.
Toss through the beans and serve at room temperature with some more fresh lemon.


It keeps well in the fridge for up to 5 days.
