Pineapple Fried Rice with Prawns and Chicken (Kao Phad Sabparod)

1. 30 ml cooking oil
2. 1 clove garlic – crushed
3. 1 egg
4. 1 tbsp small diced onions
5. 1 tbsp small diced carrots
6. 1 tbsp small diced mixed bell-peppers (red & green colours)
7. 400g minced chicken or ham cut in dice size
8. 3 prawns – shelled and cooked (size 31-40)
9. 1 tsp curry powder
10. 10 g fresh basil
11. 200 g steamed Spekko Jasmine Fragrant Rice (or 1 bowl)
12. 1 tbsp white sugar
13. 1 tbsp oyster sauce
14. 1/2 tbsp salt
15. 2 tbsp vinegar
16. 20 pieces of diced pineapple
17. 1 lemon wedge
18. 1 stem coriander


Heat up the wok and put No,1 and No.2 until the garlic turned a little bit yellow and then put No.3 to stir in wok. When the egg becomes solid then put No. 4 to 7 to wok and stir fry until the chicken is cooked. Add No.9 and 10 and stir well then add No. 11 to 16 and stir well and mix well and then transfer to dish and garnish with coriander and ready to serve.
