You will need
1 large onion, finely chopped
2 cloves garlic, chopped
1 tsp ground ginger
1 tsp turmeric powder
1 cinnamon stick
Pinch of cayenne pepper
1 red chilli, seeded and chopped (for a hotter version, don’t remove the seeds)
2 cups chicken or vegetable stock
600g butternut, cubed
500g sweet potato, cubed (use the sweet potato with orange flesh if you can)
½ cup raisins
1 Tbls honey
Salt and pepper to taste
How to make it
Melt the butter in a heavy based pot.
Gently sauté the onion, garlic and chilli.
Add all the spices and sauté for another minute or two until fragrant.
Add the stock, bring to the boil and add butternut and sweet potato.
Cover and simmer for about 15 minutes or until the veggies are cooked.
Add the raisins and honey and heat through.
Season with salt and pepper to taste.
