Seared Fillet Wrap with Tzatziki and Coriander Salsa

Makes 4 wraps

I make these wraps as a light and quick lunch or dinner option. I use this as a fast food alternative for my kids. Children love creating their own wraps by adding the toppings. They are also more likely to try new flavours when they are involved in assembling their own meals.


4 soft flour tortilla wraps
600g beef fillet
Salt and pepper to season
Salad leaves, rocket or lettuce

Coriander Salsa

1 large onion, finely chopped
Juice and zest of 2 lemons
4 tomatoes, blanched, deseeded and diced
100ml fresh coriander
2 cloves garlic, crushed


2 Mediterranean cucumbers
500ml greek yoghurt
2 garlic cloves, crushed
30ml fresh mint
5ml garam masala
Salt and pepper

Here’s how

Combine all the ingredients for the coriander salsa.
For the tzatziki: peel, deseed and grate the cucumbers. Sprinkle with salt. Leave aside for 5 minutes. Squeeze out excess moisture. Combine the cucumber with the remaining tzatziki ingredients. Mix well.

Slice the beef fillet into 4 portions and season with salt and pepper. Sear the beef fillet on a high heat in a cast iron frying pan. Remove from the pan and allow to rest for a 3-4 minutes. Slice into thin strips.

To Assemble

Warm a tortilla wrap. Place salad leaves on the wrap. Top with fillet strips, coriander salsa and tzatziki. Tightly roll up the tortilla and slice into two.
