The name is deceiving but this makes a wonderful, late and lazy Sunday Brunch. I made this for some friends after a serious night on the town. Although eating the next morning seemed like a bad idea, I managed to convince my friends to try this omelette. I am proud to say that my grumpy best friend got out of bed to try it!

6 eggs
30ml oil

90g smoked salmon
1 avocado, stoned and sliced
1 green chilli, deseeded and finely chopped
2 spring onions, finely chopped
Juice of 1 lemon
Salt and freshly ground black pepper to taste
Fresh coriander to garnish

Here’s How:
Heat oil in a non-stick frying pan. Lightly beat three eggs and cook until golden brown on the underside. I prefer well cooked eggs and turn mine over at this stage. This is optional. Place half the filling ingredients over half the omelette. Season with salt and freshly ground black pepper. Fold omelette over and repeat this process to make the second omelette. Serve with hot toast.

This omelette may be served with a dollop of crème fraiche.
